Focus on hotel F&B ‘next big trend’ – JLL

An improved food service provision in hotels may be the next big F&B trend, according to JLL, even if hotel guests might not be the main clients.

 

‘Controversial it may be, but when looking at the F&B offer, the hotel guest can often be a secondary market,’ said Alexis Marcoux-Varvatsoulis, consultant at JLL.

‘In a world where food service is simultaneously beginning to look oversupplied on the high street and lacking imagination in hotels, we are often tasked with creating the best F&B strategies for our hotel clients,’ Marcoux-Varvatsoulis said. ‘There are two types of hotels, those that do F&B very well and those that don’t. In the past year alone, I have seen hotel F&B profits ranging from -10% to generating +40% of total profits.’

According to Marcoux-Varvatsoulis, the majority of hotels could increase their F&B revenues from hotel guests by 20%-40% on average, depending on the hotel type, making day visitors essential. ‘It highlights the importance of being attractive to the surrounding market.’

And to hoteliers not sure if they can be bothered with F&B, Marcoux-Varvatsoulis posed a question: ‘Why are restaurants in hotels viewed as a hassle when there is a clearly a profitable restaurant market worth €74.5 mln between hotels, pubs and restaurants in the UK alone?’
